Eric
Ledezma joined our team right out of high school, from a job at
McDonalds. He has always shown dedication to doing a job well done,
and in the past year and a half went from server staff, to dishroom
staff, and finally into food prep and our Culinary Tech position. He
has helped us operate as a Green Team with an eye on cutting energy use
and saving food waste. Last fall, when we had a shortfall in the
Production Line, Chef Caitlin began to coach and mentor him into a
Cook/Supervisor--and this week, in her absence, he took initiative and
ran with it for our Ladies Service Board Luncheon. To date, every one
of our Cooks has come from within the ranks of our servers: And through
coaching, mentoring, and Chef-to-Chef moments; has excelled.
